The imperial city of Fez, is a true stronghold of the country's culture and identity. Entering Fez (or Fes) you will feel like you have taken a dip in the past and you will breathe a medieval air: your senses will be lost in wonderful landscapes, particular sounds, rich scents and many colors. Fez is divided into the New City or Fès el-Jedid, that is the imperial city built starting from 1200, where the station, the Royal Palace and the Jewish quarter are located, and the Old City, or Medina, called Fès el-Bali, the oldest walled part of Fes, a real labyrinth of streets, over 9 thousand, with markets of all kinds, from carpets to brass objects, ceramics to fabrics and leather, and where goods are still transported on the back of donkey. The city, founded as the capital of the Idrisid dynasty between 789 and 808, is home to the oldest university in the world and reached its peak between 1200 and 1300 when it ousted Marrakech from the role of capital. The Ville Nouvelle, south of Fès el-Jedid, is the area where the city's restaurants, bars, cafes, bookstores and other shops are located.

The most interesting places to see are concentrated inside the medina, declared a UNESCO heritage site. The vibrant center, crossroads of activities and lives, is Jemaa El Fna Square and the bazaar that surrounds it. Moving around the city center, the minaret of the largest mosque in Marrakech, Koutoubia Mosque, is a constant point of reference. 69 meters tall, it is the oldest and largest of the last three Almoravid minarets (1100-1220 AD) left in the world. The Medersa ben Youssef, a Koranic school of a later period (16th century), has a refined, detailed
architecture, with a courtyard carved in cedar, plaster and marble. Generations of students have formed here over the centuries; today it is open to the public as a place of historical interest. In the heart of the medina, near the ancient Jewish ghetto, is the Bahia Palace, built in 1890 by a grand vizier, considered a masterpiece of traditional Moroccan architecture. The Menara Gardens are instead near the Jemma el Fna square; these are different spaces of tranquility with trees and flowers in the center of the medina.
